This Mediterranean Salmon Fillet recipe features tender salmon fillets seasoned with Mediterranean herbs, olive oil, and a fresh lemon dressing. It’s a light, healthy, and flavorful dish perfect for a quick weeknight dinner or a special occasion.


Ingredients:

  • For the Salmon:

    • 4 salmon fillets (about 6 oz each)

    • 2 tbsp olive oil

    • 1 tsp dried oregano

    • 1 tsp dried basil

    • 1/2 tsp garlic powder

    • 1/2 tsp smoked paprika (optional for a smoky flavor)

    • Salt and pepper to taste

    • Zest of 1 lemon

  • For the Mediterranean Salad:

    • 1 cup cherry tomatoes, halved

    • 1 cucumber, diced

    • 1/4 red onion, thinly sliced

    • 1/4 cup Kalamata olives, pitted and halved

    • 1/4 cup crumbled feta cheese

    • 1 tbsp olive oil

    • 1 tbsp red wine vinegar

    • 1 tsp dried oregano

    • Salt and pepper to taste

  • For Serving:

    • Fresh lemon wedges

    • Fresh parsley for garnish


Instructions:

  1. Prepare the Salmon:

    • Preheat your oven to 400°F (200°C).

    • Place the salmon fillets on a baking sheet lined with parchment paper.

    • Drizzle olive oil over the fillets, then sprinkle with oregano, basil, garlic powder, smoked paprika (if using), lemon zest, salt, and pepper.

    • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  2. Prepare the Mediterranean Salad:

    • While the salmon is baking, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a bowl.

    • Drizzle with olive oil and red wine vinegar, then sprinkle with oregano, salt, and pepper. Toss to combine.

  3. Assemble and Serve:

    • Once the salmon is done, remove it from the oven and plate it.

    • Serve with the Mediterranean salad on the side, garnish with fresh parsley, and add lemon wedges for an extra burst of flavor.
