This Mediterranean Salmon Fillet recipe features tender salmon fillets seasoned with Mediterranean herbs, olive oil, and a fresh lemon dressing. It’s a light, healthy, and flavorful dish perfect for a quick weeknight dinner or a special occasion.
Ingredients:
For the Salmon:
4 salmon fillets (about 6 oz each)
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional for a smoky flavor)
Salt and pepper to taste
Zest of 1 lemon
For the Mediterranean Salad:
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese
1 tbsp olive oil
1 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
For Serving:
Fresh lemon wedges
Fresh parsley for garnish
Instructions:
Prepare the Salmon:
Preheat your oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
Drizzle olive oil over the fillets, then sprinkle with oregano, basil, garlic powder, smoked paprika (if using), lemon zest, salt, and pepper.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
