Ingredients

  • For the Pastry:

    • 200g (7 oz) plain flour

    • 100g (3.5 oz) unsalted butter, cold and diced

    • 1 egg yolk

    • 2-3 tbsp cold water

    • Pinch of salt

  • For the Filling:

    • 150g (5 oz) smoked bacon, diced

    • 200g (7 oz) mixed mushrooms, sliced

    • 50g (1.7 oz) fresh rocket (arugula)

    • 3 large eggs

    • 200ml (7 fl oz) double cream or heavy cream

    • 100g (3.5 oz) grated Gruyère or mature cheddar cheese

    • Salt and freshly ground black pepper

    • 1 tbsp olive oil

Instructions

  1. Make the Pastry:

    • In a bowl, rub the cold butter into the flour and salt until the mixture resembles breadcrumbs.

    • Add the egg yolk and enough cold water to bring the dough together. Form into a ball, wrap in cling film, and chill for 30 minutes.

  2. Prepare the Filling:

    • Heat olive oil in a pan over medium heat. Fry the diced bacon until crispy, then remove and set aside.

    • In the same pan, sauté the mushrooms until browned and cooked through. Set aside to cool.

  3. Preheat Oven:

    • Preheat your oven to 190°C (375°F).

  4. Roll Out the Pastry:

    • Roll out the chilled pastry on a floured surface to fit a 9-inch (23 cm) tart tin. Press into the tin, trim the edges, and chill for 10 minutes.

    • Line the pastry with baking paper and fill with baking beans or rice. Blind bake for 15 minutes. Remove the paper and beans and bake for another 5 minutes until the base is crisp.

  5. Assemble the Quiche:

    • Spread the bacon, mushrooms, and rocket evenly over the pastry base.

    • In a bowl, whisk the eggs with the cream, grated cheese, salt, and pepper. Pour this mixture over the filling.

  6. Bake:

    • Bake the quiche in the oven for 25-30 minutes, or until the filling is set and golden on top.

  7. Serve:

    • Let the quiche cool slightly before slicing. Serve warm or at room temperature, optionally with a fresh green salad.
