Ingredients
For the Pastry:
200g (7 oz) plain flour
100g (3.5 oz) unsalted butter, cold and diced
1 egg yolk
2-3 tbsp cold water
Pinch of salt
For the Filling:
150g (5 oz) smoked bacon, diced
200g (7 oz) mixed mushrooms, sliced
50g (1.7 oz) fresh rocket (arugula)
3 large eggs
200ml (7 fl oz) double cream or heavy cream
100g (3.5 oz) grated Gruyère or mature cheddar cheese
Salt and freshly ground black pepper
1 tbsp olive oil
Instructions
Make the Pastry:
In a bowl, rub the cold butter into the flour and salt until the mixture resembles breadcrumbs.
Add the egg yolk and enough cold water to bring the dough together. Form into a ball, wrap in cling film, and chill for 30 minutes.
Prepare the Filling:
Heat olive oil in a pan over medium heat. Fry the diced bacon until crispy, then remove and set aside.
In the same pan, sauté the mushrooms until browned and cooked through. Set aside to cool.
Preheat Oven:
Preheat your oven to 190°C (375°F).
Roll Out the Pastry:
Roll out the chilled pastry on a floured surface to fit a 9-inch (23 cm) tart tin. Press into the tin, trim the edges, and chill for 10 minutes.
Line the pastry with baking paper and fill with baking beans or rice. Blind bake for 15 minutes. Remove the paper and beans and bake for another 5 minutes until the base is crisp.
Assemble the Quiche:
Spread the bacon, mushrooms, and rocket evenly over the pastry base.
In a bowl, whisk the eggs with the cream, grated cheese, salt, and pepper. Pour this mixture over the filling.
Bake:
Bake the quiche in the oven for 25-30 minutes, or until the filling is set and golden on top.
Serve:
Let the quiche cool slightly before slicing. Serve warm or at room temperature, optionally with a fresh green salad.
