Tomato Crostini with Whipped Feta

A delightful and easy appetizer with creamy whipped feta and fresh, juicy tomatoes on crispy crostini.

Ingredients:

  • For the Crostini:
    • 1 French baguette (cut into 1/2-inch slices)
    • 1/4 cup olive oil
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon freshly ground black pepper
  • For the Whipped Feta:
    • 8 ounces feta cheese (crumbled)
    • 1/2 cup cream cheese (softened)
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon dried oregano
    • 1/2 teaspoon garlic powder
    • Salt and pepper to taste
  • For the Tomato Topping:
    • 2 cups cherry tomatoes (halved)
    • 2 tablespoons fresh basil (chopped)
    • 1 tablespoon olive oil
    • 1 teaspoon balsamic vinegar
    • Salt and pepper to taste

Instructions:

  1. Make the Crostini:
    • Preheat your oven to 375°F (190°C).
    • Arrange the baguette slices in a single layer on a baking sheet.
    • Drizzle with olive oil, and sprinkle with salt and pepper.
    • Toast in the oven for 10-12 minutes or until golden and crispy.
    • Remove from the oven and set aside to cool slightly.
  2. Make the Whipped Feta:
    • In a food processor, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
    • Process until smooth and creamy.
    • Taste and adjust seasoning if necessary.
  3. Prepare the Tomato Topping:
    • In a small bowl, combine the halved cherry tomatoes, chopped basil, olive oil, balsamic vinegar, salt, and pepper.
    • Toss gently to combine.
  4. Assemble the Crostini:
    • Spread a generous amount of whipped feta on each crostini.
    • Top with a spoonful of the tomato mixture.
    • Serve immediately and enjoy!

Tips:

  • You can add a drizzle of honey on top for a sweet contrast.
  • For extra crunch, sprinkle some pine nuts or chopped walnuts on the crostini before serving.
